Traditional Vegan Scone Recipe Everyone will LOVE!

Image
I'm kinda known for my scones. They are a family favorite. We eat them with fresh fruit and a drop of heavy coconut cream for an easy lovely dessert. I found it was easy to adapt my traditional recipe and make it vegan!  I think reading Wodehouse, and Christie as a child made me love the idea of English Teatime. When I tried my first scone recipe I was hooked.  Ingredients: 2 cups unbleached flour 1 tsp baking powder 1/3 cup sugar, plus 1/8 cup for dusting 1 tsp salt 1/2 tsp vanilla extract 1/2 tsp almond extract 1/2 (approximately) can of first pressing coconut milk Directions: Set oven to 350 degrees. In a mixing bowl combine the flour, baking powder, salt and 1/3 cup sugar.  DO NOT shake up the canned coconut milk. Scoop out the top 1/4 of the can's thick white part of the coconut. Add the extracts. Combine gently, it should become crumbly. Continue to add small amounts of the clear portion ...

Favorite Christmas Reads

Image
I know, most are complaining that we go straight from Halloween to Christmas. I happen to see Thanksgiving and Christmas as one long holiday season that flows and blends together. I am one who will listen to Christmas music November 1st. So if you aren't ready yet, come back in a few weeks. For the rest of us, put on some Micheal Buble holiday music and grab a book! Part of feeling in the holiday spirit is reading a fun Christmas themed book. Here are some of my favorites! You will notice that many are mysteries because I love a good cozy mystery.  Vintage woman reading book First, is one that I read EVERY year, usually on Thanksgiving break. Charlotte MacLeod was an amazing, witty author. Reading her books is like a combination of P. G. Wodehouse and Agatha Christie. "Rest You Merry" is the first book in her Peter Shandy series. The entire series is lovely. I devoured every book.  Book two is another Charlotte MacLeod, "Murder Goes Mumming...

Finding Books for Jr High and High School Readers

Image
I should start by saying I am not an expert anything. I am a homeschool mom with two in college and one in high school just sharing my experience. I had one child who loved reading and two who didn't. It is hard to find books for the uninterested reader, who NEEDS to read.  When my children were younger I read everything they read. Mostly so I knew what they were consuming, but also so we could talk about it. As they got older I did this less. Both my daughters read the Hunger Games series and really liked it. I couldn't ever get into it. They were older so I didn't force myself to read it. And we still discussed it. Mostly with me listening.  My son does not love reading. He has always enjoyed audiobooks, but in high school, he needs to be able to read without the audio option to help him prepare for college.  Here are some suggestions (besides those pictured already). As always check into it to see if it fits in with your family and what you wa...
